Leapin’ Leprechauns! Taste The Rainbow!

We’ve been talking about drinking green juices and smoothies for a while now. In fact, it’s starting to become a popular misconception that only green juices are healthy. (If you don’t believe me, just check out all your friends healthy pins on Pinterest.) Green juices are indeed healthy as long as they don’t get their color from the dye Green No. 3, which by the way, has been prohibited in the European Union – so you won’t be seeing me sip down a Shamrock Shake any time soon!

Healthy eating is getting the right nutrients into our bodies so it can easily be converted to energy. Many times we can tell the type of nutrient by the color of the food.

  • Green = chlorophyll
  • yellow/orange = beta caratene
  • red/pink = lycopene
  • blue/purple = anthocyanin (fights cancer)

Each of these has their own health properties, but we get the most health benefits from eating the whole rainbow of foods. That’s were we’ll find our pot o’ gold!

Did you know you can eat clover? That’s right, shamrocks can go right into your own shamrock shake! They are completely edible and red clover is said to be a good source of calcium, chromium, magnesium, niacin, phosphorus, potassium, thiamine and vitamin C.

Since I didn’t have any clover on hand, I thought I would share two other St. Patty’s Day inspired recipes. Plus, don’t forget to check out last year’s Irish post, Slainte!

The Leaping Leprechaun Green Smoothie

1/2 cup strawberries
1 banana
1/2 cup of spinach leaves
1 cup water

Combine all ingredients into a great blender (like the Omega). Blend until really smooth, not grainy or chunky or with bits of leaves floating about. It can be thick, as you can always thin with water, but it needs to be smooth. This should take only a couple of minutes. Blend until the greens are so pulverized that they are no longer visible other than infusing your smoothie with a beautiful green color.

Taste The Rainbow Juice
makes 1 large or 2 small smoothies

1/2 c fresh or frozen cranberries
1 med carrot
1/4 c pineapple chunks
1 c spinach
1/4 c blueberries
2 figs
2 c water
3 or 4 ice cubes

Combine all the ingredients in your Vitamix or blender for 45 sec to 1 minute. This recipe calls more water to make it thin like juice without loosing all the healthy fiber. The resulting color may not look like much, but it is surprisingly refreshing.
